Nørrebro Bryghus, Anarkist and Copenhagen Cooking have teamed up this year to make this year's Copenhagen Cooking beer REBELICIOUS COOKING SAISON. The beer pays tribute to Nørrebro Bryghus, which was one of the first craft breweries in Denmark, and which was also one of the first to bring beer and food together. This year's festival beer is a Saison, which was traditionally made for the hard-working Belgian farm workers who, especially during the harvest season, really had to work hard. The beer type was fresh and mouth-watering and good for keeping spirits high among the hard-working farm workers in the hot summer months. There is therefore a completely natural link between the beer style and Copenhagen Cooking, where one of the major events is precisely the Frederiksberg Høstfest.
REBELICIOUS COOKING SAISON is made as a modern saison. The beer has lots of esters from the saison yeast, at the same time with a nice fresh acidity and a slightly bitter touch. The bitterness and freshness have been turned up a little, with the help of the addition of grapefruit. In addition, the beer is dry hopped with a bit of Nelson Sauvin which adds lots of florality. The beer is particularly suitable for the lighter dishes with fish and poultry, but can also go well with stronger and spicy dishes where the dryness and acidity can act as a cleanser.
All in all, the beer is a huge tribute to Copenhagen and a huge tribute to the fantastic food scene that has developed in Copenhagen over the years and which is seriously celebrated by Copenhagen Cooking

The idea behind the Anarchist series is to break down the conventions completely. It is a series of beers born out of a sense of detail.
