IDEA AND BACKGROUND: ‘But Beautiful’ is a unique and very special beer, far from any of the classic beers. On the other hand, it is strongly inspired by champagne and the Italian interpretation, prosecco, and is even, slowly and gently, fermented exclusively on champagne yeast. A light, very vinous and in particular extremely lively, bottle-conditioned beer with very high carbonation. But the 'soul' in 'But Beautiful' is the strongly aromatic scent and taste is completely beer-related, and created by a very intense aroma hops, as it is known from the type 'New England IPA', where very vinous - New Zealand Nelson Sauvin is used - and fruity - the German Huell Melon and Mandarina Bavaria.

APPEARANCE: Very light straw yellow, slightly unclear (unfiltered) with a fine, white foam.

AROMA: Extremely aromatic with a clear hint of vinous and fruity aroma hops, floral notes, complemented by a champagne-like vinosity.

TASTE: Very light, extremely fruity and vinous taste with light fruit acidity, hops seasoning and a very light malt body. Short, crisp and vinous aftertaste.

MOUTH FILLING: Light, extremely lively - very high carbon content - and crisp.

FOOD CHOICE: All dishes with fish, seafood and poultry at the light end, salads, light, fruit-bearing desserts and mild cheeses - soft as well as firm.

OVERALL: ‘But Beautiful’ is a completely unique and innovative beer, which due to its clear inspiration from champagne and prosecco is perfect for both festive occasions and as an aperitif. It is at the same time strongly carried by both the NEIPA-inspired aroma hop and the very high, champagne-like carbonation, obtained by bottle conditioning. An obvious alternative to both champagne and dry white wines.
